Mystery vegetable

I bought these vegetables at the farmer’s market because they were pretty, yet another vegetable I’m unfamiliar with.. A type of chard?

    • It’s rainbow chard! Ironic how many vegetables I see for the first time in Japan that are not Japanese.. I thought okra was Japanese. I have a tray of roasted squash, now I forget the name, not spaghetti squash, another kind, and onions and sweet potatoes from the other day. I was going to puree them and make a soup so I’ll chop up the chard and add it in.

      • Sounds delicious. I am on an akebi challenge at the moment. MIL sent a bag (along with a mega bag of myoga, morehey, spinach etc). I haven’t extended my repertoire beyond miso-akebi…
